Tofu Scramble

  • 1 block Extra Firm Tofu (press excess water out)
  • 2 gold potatoes
  • 1/2 bell pepper
  • 1/2 onion
  • 1 deseeded jalapeno (optional)
  • 1 cup black beans
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 TBS coconut or liquid aminos

Preheat oven to 400 degrees, stovetop is optional. In a large bowl using a fork to shred the tofu to resemble scrabled eggs then toss in remaining ingredients. Place on a large sheet pan using silicon mat or parchment paper for non sticking. Bake for 30 minutes. Optional, top with a handful of greens like spinach for 2 minutes.

Serve with favorite toppings like chips, salsa, guacamole or pico.
